Creating mints shaped as brides, grooms, wedding bells, and hearts will fascinate your guest but cut little into your budget or time.
Many brides either settle for basic round wedding mints purchased from stores or pay a caterer a high dollar amount to create elegant specialty mints for the reception. While the guests may "oooh" and "ahhh" over the appearance, taste, and effort put into wedding shaped mints, the technique does not have to come from a professional caterer. Creating wedding mints, or any occasion mints, is a fairly simple process.
Wedding Mints Recipe
Ingredients:
White or Chocolate Candy Bark
Flavoring (Mint, Peppermint, Cherry, etc)
Mint Molds (Purchase from Craft or Cake Decorating Departments)
Cake Coloring Paste (Optional)
Solid Shortening
Zipper Bags
Directions:
Begin by choosing either white or chocolate candy bark. Place the candy bark in a microwave safe bowl and melt at 30-second intervals. Stir the candy at each interval. When the bark is melted to appropriate consistency it will be smooth without clumps.
Once the bark is melted, add small amounts of cake coloring paste until the desired color is created. The best method for adding the coloring is to use a toothpick. Dab the toothpick into the past and then into the bark. Mix the bark well to evenly distribute the color. Add more to create a darker shade of the color.
Add the desired flavoring to the mixture. The amount of flavoring used depends much upon taste
Fill a fine tip mustard or ketchup squeeze bottle (often purchased cheaply from dollar stores) with the colored bark. Craft and cake stores also sell bottles of this type for mint making. However, the price is typically much higher.
Using the bottle, squeeze the colored bark into the middle of each mint mold section. Lightly tap or shake the mold to evenly distribute the candy bark into the mold. Add more if necessary. Make sure that the candy bark does not over fill the section onto the mold. Wiping away any excess now will save time later.
Place the mold flat into the freezer. Allow the mints to harden for at least 45 minutes to one hour.
Once the mints are frozen, remove the mild from the freezer. Turn the mold upside down on a cookie sheet (with the mints against the sheet) and tap it to release the mints. Gently break away any candy mint that is outside the shape of the molded design.
Place mints of the same color into a zipper bag and place back into the freezer.
Tips for Successful Mint Making:
If the bark mixture becomes stiff during the mint making process, add a small amount of solid shortening. Do not add water. Be cautious about reheating which can scorch the mixture.
